I love baking. Here are my favorite oatmeal raisin cookies. I’ve been adjusting this recipe over the years. Hope you like it.
Oatmeal Raisin Cookies (with or without nuts and chocolate)
Heat Oven to 375° - I used convection setting. Optional
Prepare cookie sheets with 1 layer parchment paper.
2 cubes of butter (1 cup) softened to room temp approximately 75°
2 Cups of raisins soaked overnight in alcohol covering the raisins. I usually use Port, Brandy, Irish Cream, Kahlua, or Rum. Pour off the excess alcohol the next day. Raisins will be plump and wet. If you don’t have alcohol, soak in fruit juice of your choice, or hot water.
1 Cup brown sugar
1/2 Cup white sugar
1 egg - large
2 Tablespoons Vanilla extract
3 cups rolled oats
1 1/2 cup flour
3/4-1 cup nuts, chocolate chips, candy etc.
Mix: Beat together
butter and sugars and vanilla until fluffy. Add egg.
Combine all dry ingredients including raisins. Fold (mix slowly) into creamed butter mix.
Bake 9-10 minutes for chewy cookies. I prefer 11 minutes if I’m transporting them. No more than 12 minutes. Remove to wire rack to cool. Makes about 50 cookies.
